Roasted Beet Dip. Recipe by Always Yummy!

There are many reasons to cook beet – it is healthy, tasty, easy and affordable. Cook an oven baked beet dip. To say it`s tasty is to say nothing. This delicious meal can be a perfect appetizer or side dish to main course. With the same success dip can be served to breakfast, dinner or festive table.

✅ Ingredients:
• large beets – 2
• olive oil – 5 tbsp
• dried thyme – 2 tsp
• vinegar 9% - 1 tbsp
• salt – ½ tsp
• ground black pepper – ½ tsp
• mayonnaise – 2 tbsp
• garlic – 2 cloves

✅ You will need:
• oven
• foil
• mixer or blender

Preparation:
1. Put the beets on 3 layers of foil, pour each with 1 tbsp of olive oil and sprinkle with 1 tsp of thyme and wrap it in all 3 layers of foil.
2. Preheat oven to 350°F /180°C and bake the beet in foil for 1h 30m.
3. Cool the baked beet, peel off and cut into small pieces.
4. Put the beet into a blender, add the vinegar, salt, pepper, 3 tbsp of olive oil and garlic and crush until smooth, add 2 tbsp of mayonnaise and beat.
5. Decorate your beet mousse-purée with greens and serve to the table with white bread toasts or flatbreads as an appetizer or side dish.
