Basil Pesto Tomato Mozzarella Chicken Bake. Recipe by Always Yummy!

Delicate and juicy chicken fillet roasted in a balmy pesto sauce acc. this recipe is a perfect dish for your dinner, family or holiday feast. It will only take you 35-40 minutes.

✅ Ingredients:
• 3 chicken breast fillet
• mozzarella – ½ cup / 100 g
• cherry tomatoes – 1 cup / 200 g
• chicken broth – ¼ cup /60 ml
• basil pesto – ½ cup / 120 g
• lemon juice – 1 tsp
• olive oil – 3 tbsp
• garlic – 2 cloves
• fresh parsley – 1 tbsp / 5 g
• ground black pepper – ½ tsp
• salt – ½ tsp

✅ You will need:
• oven
• baking dish
• pan
• bowl

Preparation:
1. Lay out the pesto sauce, chopped up garlic, lemon juice and chicken broth in a medium bowl and stir.
2. Heat a pan, add 1 tbsp of olive oil and fry the chicken fillet until golden brown over medium heat for 2-3 minutes from each side. Salt and pepper from both sides.
3. Brush a baking dish with 1 tbsp of vegetable oil, lay out the chicken breasts in it and coat with the prepared sauce.
4. Preheat oven to 365°F / 180°C and bake the chicken for 20 minutes.
5. Take out the baking dish and put a slice of mozzarella on each fillet. Put back into the oven and bake for 3-4 minutes more to melt the cheese.
6. Sprinkle the cooked chicken with chopped up parsley and serve hot with cherry tomatoes.
