Just in case you missed episode 5 of What's Cooking Kids Edition Easter Treats, Chef Abi, kid chef Sloane and Ro'dey make some ice cream floats, cheesy potato cakes and matcha cookies. Here are the recipes to try at home.

Ice cream float with fresh berries
Ingredients
1 - 2 scoops Blue Ribbon Classics ice cream
1 cup soda
1 cup Garden Foods strawberries, raspberries and blueberries

Method
In a bowl mash berries let sit for 5 mins.
Place mashed berries to a glass add a scoop of ice cream then more berries then add another scoop of ice cream and topped with soda and fresh berries with a straw.

Cheesy mashed potato cake
Ingredients
3 cups mashed potatoes
3 Tbsp President butter
2 cups shredded cheese
1 eggs
1/4 cup Sheik Lisha flour
1/4 cup chopped chives
1/2 cup bread crumbs
3 tbsp oil
Sour cream topping

Method
Mash potatoes with President butter, let cool then add all ingredients and mash with a potato masher until mixed well, if to loose add more flour. Scoop a table spoon of potato mixture and shape into a patty and coat both sides with bread crumbs, set aside till ready to fry. Topped with sour cream and chives.

Matcha oatmeal cookies
Ingredients
1 cup Almond flour
1 cup old fashioned oats
2 tbsp matcha powder
1/2 tsp baking soda
1 tsp vanilla
1 egg - room temp.
1/3 cup sugar
1/4 cup softened coconut oil
1/3 cup Nestle white chocolate chips

Method
Combine all ingredients in a bowl with a spatula then fold in chocolate chips. Use a scooper and scoop 1Tbsp into a ball and flatten into a disk, bake for 12 mins. Allow too cool on a rack where it gets crispy.
