Nanking Chicken

Chicken breasts minced 200 gm
Prawns minced 200 gm
Garlic, chopped 1 tbsp
Spring onion, chopped 1
Sesame oil 1 tbsp
Soy sauce 1 tbsp
Salt & pepper to taste
All spice powder 1 tsp
Lemon juice ½ lemon
Corn flour 2 tbsp
Flour 2 tbsp
Egg 1
Hung curd 2 tbsp
Garlic 1 tsp
Lemon juice 1 lemon
Sugar 1 tsp
Salt 1 tsp
Black pepper 1 tsp
Parsley, chopped 2 tbsp

Other Ingredients:
Banana leaves as required

mix everything in a bowl and keep aside for 15 minutes. Divide the mixture into flat kebabs. Take a banana leaf and cut it into pieces large enough to hold each patty. Place patty onto the leaf and into hot oil slide each leaf, frying the patty on the leaf. After 3-4 minutes slide the patty off the banana leaf, turn and fry the other side for 1-2 minutes. Don't over fry or it won’t remain juicy. Mix hung curd with garlic, lemon juice, sugar, salt, pepper and chopped parsley. Serve the nanking chicken with the sauce.

For The Sauce:
Water 300 ml
Tomato ketchup 3 tbsp
Worcestershire sauce 3 tbsp
Sugar 2 tbsp
Sesame oil 1 tbsp
Salt 1/2 tsp
Corn flour (mixed with little water) 1 tbsp

Put everything in a saucepan, bring to a boil and add corn flour slurry.


Brioche French Toast

Eggs 4
Milk ¾ cup
Sugar 1 tbsp
Vanilla essence 1 tsp
Butter 3 tbsp
Brioche bread 10 slices
Maple syrup, warmed ½ cup
Fresh berries for serving

Whisk the eggs, milk, sugar and vanilla essence. Heat 1 tablespoon butter in a pan. Place each slice of brioche into the egg mixture and turn to coat both sides. When butter has melted and begins to foam, add the coated brioche. Cook for 3 to 4 minutes or until golden brown and then flip the bread and cook for another 3 to 4 minutes on the other side. Transfer the French toast to a platter and keep warm. Wipe down the pan with a paper towel each time and repeat the process with remaining butter, bread, and egg mixture. Serve immediately with warmed maple syrup and fresh berries.
