This person cooked delicious vegan super green spaghetti. They started off by taking green leaves and chopping their stems into fine pieces. They ground the bread crumbs into fine pieces before stir-frying them with leaf stems, garlic paste, and salt. Later on, in a large pan, they added spaghetti, garlic, and green leaves and boiled them before blending them together with bread crumbs, vegetable oil, vinegar, and miso seasoning. Once the sauce was prepared, they added the boiled spaghetti to it before serving it on a plate.

00:00This is my version of Jamie Oliver's Super Green Spaghetti.

00:03Remove the cavolo nero leaves and roughly chop the stems.
00:05Then blitz a slice of bread into large breadcrumbs and fry in a pan with oil,
00:09the stems, garlic, and salt until golden and fragrant.
00:12Start cooking your spaghetti in seasoned water.
00:14Blanch the garlic and cavolo nero leaves for five minutes.
00:17Add both to a blender along with the sourdough bread.
00:19I'm using marrow fat pea miso, which is made with locally grown peas,
00:22but you can use any miso you like.
00:24Add the miso, some olive oil, vinegar, and a splash of pasta water.
00:28Strain the pasta and mix together with the green sauce.
00:32Then serve on a plate with the breadcrumbs and extra olive oil.
