A piece of soft and delicious mini sweet potato donut is a perfect ending to many meals.
These mini ube donuts recipe is easy to make. You dont need to use yeast in this recipe, which makes it quicker too.
I’m using ube/purple sweet potato instead of the normal ones. The ube donuts are glazed with delicious vegan cinnamon glaze. Just perfect for your afternoon snack :)
To make these sweet potato donuts, you’ll need :

200g sweet potato
100g glutinous rice flour
1/4 tsp baking powder
1/2 tsp salt
3 tbsp sugar
50 ml milk (add more till it gets the right consistency)
1 tbsp flour

Vegan cinnamon glaze :
60g powdered sugar
20 gr almond milk
1/4 tsp cinnamon
