Pistachio Milk Cake

Ingredients:
Flour 1-1/2 cups
baking powder 1 tsp
salt 1/2 tsp
eggs 6
sugar 1 cup
water 1/4 cup
vanilla essence 4 tsp
green color few drops
For Topping :
condensed milk 1 can
evaporated milk 1 can
cream 1 cup
sugar 2 tbsp
pistachios (chopped) 1 cup
whipped cream 1 cup

Method
Sift the flour, baking powder, and salt together in a bowl. Beat the eggs and sugar until doubled. add one teaspoon vanilla essence, green color and water. Mix well. Gently fold the flour ingredients. Pour the batter into a greased 9 inches spring form pan and bake for 35 to 45 minutes at 180 degrees C. Put cake on a platter which is slightly deep enough to hold the milk. Whisk together in a bowl the evaporated milk, the condensed milk, 1 cup of the cream, and 2 teaspoons of the vanilla. Using a long tooth pick or skewer poke holes all over the cake. The holes will allow the cake to absorb more of the milk. Pour or spoon the milk mixture slowly all over the cake and allow it time to soak in before adding more milk. Refrigerate. Whip up the cream and spread gently on top and then sprinkle with chopped pistachios.

CHICKEN HARISSA

Ingredients for Harissa paste:
Dried red chilies 4 oz
Caraway seeds 1 tsp
Coriander seeds 1 tsp
Cumin seeds 1 tsp
Garlic 3-4 cloves
Salt 1 tsp
Oil 2 tbsp
FOR CHICKEN HARISSA:

Olive oil 1 tbsp
Chicken thighs ½ kg
Salt to taste
Black pepper as required
Onion (chopped) 1
Garlic (chopped) 2 cloves
Tomato paste 2 tbsp
Chickpeas (boiled) 1 cup
Harissa paste 1/4 cup
Chicken stock 1/2 cup
Parsley (chopped) 1/4 cup
Lemon wedges for serving


Method for paste:

Place the chilies in a bowl and cover with boiling water. Let stand for 30 minutes. Toast the caraway, coriander, and cumin seeds, when fragrant remove them from the pan. Grind the spices Drain the chilies, reserving the liquid. Remove and discard the stems and seeds from the chilies. Process the chilies, ground spices, garlic and salt. With the machine running, slowly drizzle in the olive oil and process to form a smooth and thick paste. Scrape down the sides of the bowl occasionally. If a thinner paste
