Quick Chicken Pulao

Ingredients:
Basmati rice 1-1/2 cups
Boneless chicken breasts 2
Onions , 2
Ghee 3 tbsp
Cloves 3
Green cardamoms 2-3
Black peppercorns 5
Bay leaf 1
Cumin seeds 1 tsp
Ginger-garlic paste 1 tbsp
Yogurt 2-3 tbsp
All spice powder 1/2 tsp
Salt to taste
Chicken stock cube 1
Coriander to garnish
raita to serve

Method :
Heat ghee, add cloves, green cardamoms, black peppercorns, bay leaf and cumin seeds, sauté till fragrant.Add chopped onions. Add ginger-garlic paste and yogurt, mix well and sauté.Add chicken and water and cook till half done then addearlier soaked and drained rice, all spice powder, salt and powdered chicken stock cube. Cover and cook till both rice and chicken are done. Garnish with coriander and serve with raita.

Apricot Jam Nankhatai

Ingredients:
Apricot jam
Gram flour 1/2 cup
Flour 1-1/2 cups
caster sugar 3/4 cup
Green cardamom powder 1/4 tsp
Baking powder 1 tsp
Baking soda a pinch
Pistachio powder 1/4 cup
Clarified butter 3/4 cup
Pistachio slices for garnish
Method:
Mix gram flour with flour, caster sugar, green cardamom powder, baking powder, baking soda andpistachio powder.Add ghee, mix and knead into stiff dough.Divide dough into small portions, flatten eachslightly, make a slight dent in the center and place them on a lined baking tray. Bake at 180 degrees C for 6-8 minutes.Remove from oven, pipe out jam into the dents and place the tray back in the oven. Bake for 4-5 minutes more.Take the tray out of the oven, garnish with pistachio slices and set aside to cool on a wire rack.
