“Beer can be anything,” says Lauren Woods Limbach, New Belgium’s wood cellar director and blender. Limbach, who has been with the brewery since 1997, loves the thrill of working on a new batch because there’s room for creativity throughout the entire process. “It’s really up to you to redefine beer everyday,” Limbach tells Popular Mechanics.
