Chicken Ajmeri

Ingredients:
Chicken 1 kg
Oil 4 tbsp
Onions (ground) 4
Coriander powder 2 tbsp
Red chili powder 1 tbsp
All spice powder 1 tsp
Cream 2 tbsp
Cashews (chopped) 2 tbsp
Salt 1 tsp
Mint leaves (torn) few
Coriander leaves (chopped) 2 tbsp

For Marination:
Yogurt 1 cup
Ginger paste 2 tbsp
Garlic paste 2 tbsp
Green chili paste 1 tbsp
Oil 1 tbsp
Salt 1 tsp
Lemon juice 1 tsp

For Whole Spices:
Bay leaves 2
Whole Black peppercorns 4
Cloves 4
Black cardamoms 2
Green cardamoms 4
Cinnamon stick 1 inch
Mace 1 tsp
Carom seeds 1/2 tsp

Method:
Add all the ingredients under 'marination' and mix well with the chicken. Cover the bowl with a lid or cling wrap

it and refrigerate it for 1 hour. Heat oil, add all the above mentioned ingredients under 'whole spices' and let

them crackle. Now add ground onion and sauté till raw smell goes off and it turns golden in colour. Add marinated

chicken pieces along with marination and mix well, fry till curd starts leaving water. Now add coriander powder,

red chili powder, all spice powder and mix. Let the chicken cook on low heat till oil starts leaving from sides.

Add mint, cream, chopped cashews and mix well. Add warm water if needed to make curry as per required consistency.

Garnish the curry with fresh chopped coriander.

Rose Barfi

Ingredients:
Clarified butter 3 tbsp
Milk 1/2 cup
Milk powder 1 cup
Caster sugar 1/4 cup
Rose syrup 1 to 3 tbsp
Pistachios (chopped) 2 tbsp

Method:
Heat Clarified butter. Add milk and bring it to boil on low flame. Keep stirring to prevent it from burning at the

bottom. Add the milk powder and keep whisking while adding so that there are no lumps. Continue stirring this on

low flame for 2 to 3 minutes. Add sugar, rose syrup and mix. Continuously keep stirring on low flame for 8 to 10

minutes till the mixture forms like a ball or dough and clarified butter starts separating from the pan.
Transfer this mixture to a greased plate. Spread and smooth with back of spoon or spatula. Garnish with nuts and

press gently with spatula. Let this set for about 1 1/2 to 2 hours. Once it sets cut them into desired shape.
