Banana Crumble Muffins:

Ingredients:
Flour 2 cups
Baking powder 1 tsp
Brown sugar 1/3 cup
Nutmeg ½ tsp
Bananas (mashed) 3
Egg 1
Oil ¼ cup
Yogurt ½ cup

For Crumble Topping:
Butter 25gm
Flour ½ cup
Brown sugar 1 tbsp
Pumpkin seeds 1 tbsp

Method:
Mix flour, baking powder, brown sugar and nutmeg. Add in mashed bananas, egg, oil and yogurt. Mix lightly, do not overbeat. Batter should be lumpy.
To make the crumble topping, Rub the butter into the flour add in brown sugar and pumpkin seeds. Spoon mixture in muffin tin and sprinkle with the topping and bake at 210 degrees C for 20 minutes or until golden.



Oat Bhurji:

Ingredients:
Oil 1 tsp
Onions (chopped) 2
Turmeric powder ¼ tsp
Red chili powder ½ tsp
All spice powder ¼ tsp
Cumin powder ¼ tsp
Coriander powder ¼ tsp
Coriander leaves (chopped) ¼ cup
Oats 35 gm
Butter ½ tsp
Tomato (chopped) 1
Tomato (blanched and pureed) 1
Onion 1
Salt to taste
Oats 1 tbsp (for garnish)

Method:
Heat the oil and butter, add the chopped onion. When the onion is brown add the chopped tomatoes. When the tomatoes begin to soften, add in all the spices, salt and the tomato puree. Add the oats and water and stir. Allow the mixture to simmer and for the oats to cook for about 3 minutes. If the mixture becomes too thick, you can add a little more water to cook the oats. Garnish with oats and serve.
