The wall of a pitcher made of clay has innumerous microscopic pores, which aren't visible to the naked eye. This makes the surface of the pitcher porous and this helps the water to seep out of the pitcher. The water outside the pitcher then gets evaporated, and to evaporate water, energy is required. The water outside gains this energy from the water inside the pitcher. This decreases the temperature of the water thus making it cooler.
You must have noticed that after a bath, when we stand under a fan, we feel cold. This is because of the same process, evaporation. Sometimes a wet cloth is wrapped around the pitcher which results in faster evaporation of the water thus cooling the water quicker. This increases the surface area for evaporation and more water is available as well thus speeding the process.

आपने देखा होगा जब हम नहाकर पंखे के नीचे खड़े होते है तो हमें ठंडा महसूस होता है, ये भी इसी कारण होता है। कई बार घड़े के ऊपर गीला कपड़ा लपेट दिया जाता है जिससे पानी तेज़ी से गरम होता है। यह इसलिए होता है क्युकी वाष्पीकरण का सतह क्षेत्र बढ़ जाता है और गीला कपड़ा पानी देता है जो घड़े के अंदर मौजूद पानी को तेज़ी से ठंडा करता है।
