“There was a couple of hours each week where it was just Mum and I, driving back and forth, having a bit of lunch together and then her taking me back to school.” Just after his eighth birthday, chef Josh Niland was diagnosed with cancer — speaking to Kurt Fearnley on One Plus One, he reflects on the memories from that time that sparked his passion for food.
