S. Korean researchers develop rice probiotics

South Korean researchers have developed a new probiotic that can be used in all kinds of products, from bread to cosmetics and healthy drinks.
The difference is... the bacteria are extracted from rice.
The researchers say it's healthier than probiotics from animal byproducts like milk.
Kim Cheong-ah has this report.
This just looks like regular, everyday bread but in this bakery all the products are mainly made from rice.
Rice flour is used instead of regular flour but recently the bakers here have also started adding rice probiotics.
Rice powder is fermented with the probiotics and then bread is made out of it.
And, even after baking, the effects of the probiotics remain so it's not only good for your health, but also gives the bread a longer shelf life.
"We have found that we can make unique products and also satisfy our consumers using this new probiotic product."
This fermented rice product, which has been patented domestically and abroad, was developed by the Rural Development Administration from a patented bacteria extracted from soybean paste.
Researchers have found that probiotic drinks made from rice probiotics greatly increase the number of good bacteria within the intestines compared to those made from milk.
They said it helps with the immune system, helps tackle obesity and is rich in antioxidants.
It can also be used for snacks, cosmetics and even in pet food.
"It can foster rice consumption and because it is plant-based, it can be easily consumed by people who have trouble taking animal-based fermented products."
The Rural Development Administration plans to develop various products made out of these rice probiotics. Research has shown they can help create a ripple effect in the COVID-19-hit economy.
