Kerala style vegetable cutlet is little different from other part of india and here i have used beetroot in this cutlet so we can also call this as a beetroot cutlet which is very tasty and crispy in texture. Vegetable cutlet is an excellent indian snack with a combination of mashed potatoes and vegetables with crispy outside and soft inside. There are several variation to simple vegetable cutlet recipe and it can be prepared with bread corn mixed vegetables and paneer.
