Butternut Squash Stew in coconut Milk

Recipe:
ingredients:
2 cups butternut squash cubes
1 cup coconut milk
1" ginger sliced
1 long green chili
2-3 curry leaves
1/2 teaspoon mustard seeds
1 teaspoon coconut oil
Salt to taste

Directions:
1. Heat oil in a pan, Add mustard seeds wait till they splutter, then add curry leaves & ginger & fry.
2. Add butternut squash cubes, coconut milk, chili, salt & ginger slices. Cook for 5-10 minutes on Medium High or until butternut squash is tender.
3. Serve & enjoy!
