Scallops and Chicken Porridge

I like porridge and congees. They are light, homely and warm. Always a great combination on rainy days or when I feel particularly down.

They are easy to make and requires minimal washing.
Washing up is really a pain after all the cooking isn't it?

I feel that using Japonica rice is better for congee! The texture comes out smoother as compared to using the usual Thai Jasmine rice.
