Thai Style Steam Fish

I had Lemongrass Steam Fish in a Thai restaurant recently and I thought I can try to replicate the dish at home! This is my own take on the dish and not strictly authentic.

Ingredients:

For the fish
1 Seabass (approx 600g)
1 Stalk Lemongrass
1 Piece Lime Leaf
4 Slices of Ginger

Discard the liquid from fish after steaming!

For the sauce
1 Thai Lime
3 Stalks Lemongrass
2 Piece Lime Leaf
1 Red Chilli/Chilli Padi
1/2 Tablespoon Sugar
1/2 Tablespoon Concentrated Chicken Stock
1 1/2 Tablespoon Fish Sauce
Half Head of Garlic
150ml Water
