Chicken Roti Wraps:
Ingredients for marinade:
Oil 2 tbsp
Ground Cumin 2 tsp
Ground Coriander 1 tsp
Paprika 2 tsp
Chili Flakes a pinch
Turmeric ½ tsp
All spice powder 1 tsp
Lemon juice of ½ lemon
Other Ingredients:
Chicken breasts (cubed) 2
Roti 4
Onion (sliced) 1
Coriander (chopped) 2 tbsp
Yoghurt 4 tbsp
Mango Chutney 4 tbsp
Salt to taste
Black pepper as required
Method:
Marinate the chicken cubes in the marination ingredients and set aside overnight. When ready to cook, remove the chicken from the marinade and season with salt and pepper, cook it till done in very little oil. Top each warm roti with yoghurt, mango chutney and chicken add the onion and coriander. Wrap up in a greaseproof paper.

HAND PIES:
Ingredients:

Chicken breast (chopped) 1
Oil 1 tbsp
Onion (chopped) 1
Garlic (minced) 1 clove
Salt to taste
Black pepper as required
Thick white sauce 1 cup
Cream cheese 2 tbsp
Shredded cheddar cheese 1-1/2 cups
Puff pastry 1 kg
Egg 1
Cream 1 tbsp
Flour for rolling out dough

Method:
Heat oil. Add onion and garlic and sauté, add in chicken breast and season with salt and pepper. Cook till done and remove pan from heat and stir in thick white sauce, cream cheese and 1 cup cheddar until fully incorporated. Set aside while you roll out the puff pastry. On a lightly floured work surface, roll out puff pastry dough until it’s about 1/8" thick. Cut into large rounds or use a mold to shape into small sized pies. Spoon a heaping tablespoon of chicken mixture onto one half of each circle. Fold it in half so the other side covers the filling to create a semicircle. Press down around the edges to seal, and then press the edges of the dough together with the back of a fork. Repeat process with remaining dough. Place hand pies on baking sheets. Brush each pie with egg and cream and sprinkle with remaining 1/2 cup cheddar cheese. Bake until puffed and golden brown, about 25 minutes. Cool for at least 10 minutes on baking sheet. Serve warm or at room temperature.


Banana cream:
Ingredients:
Bananas 2
Caramel sauce 3 tbsp
Biscuit crumbs ½ cup
Cream 1 cup
Method:
Mix the sliced bananas with cream and caramel sauce and sprinkle biscuit crumbs and serve.
