Learn How To Make Vangi Bath / Brinjal Rice WIth Chef Samatha Only On Variety Vantalu.

#VangiBath (#BrinjalRice ), a light spicy rice dish made with sauteed brinjal, is yet another delicious rice recipe from South Indian cuisine. It is particularly popular in Karnataka, Andhra Pradesh, Tamil Nadu and Maharashtra where Vangi means brinjal/baingan/eggplant and Bath/Bath/Bhat means rice in the local language. Due to this, it is also commonly known as Brinjal Rice.

Ingredients:
3 Bay Leaf
Black Stone Flower
1 tsp Mustard seeds
1 tsp Cumin Seeds
1 tsp Split Chickpeas
1 tsp Urad dal
One Onion (Chopped)
5 Green Chillies
10-15 Curry Leaves
Mint Leaves
Coriander Leaves
500 gms Egg Pant
1 tsp Turmeric Powder
2 tsp Red Chilli Powder
Salt To Taste
1/4 tsp Garam Masala
250 gm Boiled Rice
1 Lime Juice

Ingredients for Vangi Bath masala powder:
1 tsp Oil
2 tsp Coriander seeds
1/2 Tsp Black Pepper
1/2 tsp Black Cumin Seeds
1 Inch Cinnamon Stick
3 Cloves
2 Cardamom
1 tsp Urad dal
1 tsp Split Chick Peas
1/2 Cup Ground Nuts
5 Dry Red Chillies
2 tsp Desiccated Coconut

Method :
1. To prepare Vangi bath, first, cook the rice and set it aside.
2. Firstly heat 1 tsp oil and roast coriander seeds, black pepper, Black Cumin Seeds, Cinnamon Stick, Cloves, Cardamom, urad dal, red chilies, Split Chick Peas, Ground Nuts, Dry Red Chillies, Desiccated coconut, until slightly brown under a low-medium flame.
3. Roast everything together until dals turn brown
4. Wait until cool and grind it into a fine powder and keep it aside.
5. Next, proceed with the Vangi bath recipe.
6. Take oil in a frying pan and heat it. Add Bay Leaf,3 Bay Leaf
Black Stone Flower, Mustard seeds, Cumin Seeds, Split Chickpeas, Urad dal, One Chopped Onion, Green Chillies, Curry Leaves, curry leaves, Coriander Leaves, let's saute it for some time.
7. Add in soaked brinjal pieces by squeezing out the water. Fry the brinjals for 1 minute under high flame.
8. Next, add Turmeric Powder, Red Chilli Powder, Salt, Garam Masala and fry for 2 more minutes under medium flame.
9. Now add Vangi bath powder.
10. Cover and cook the brinjals for 5 minutes under low flame.
11. Add cooked rice and mix it well.
12. Finally, add 1 lime juice and turn off the gas
13. Serve hot with raita.
