Hasselback potatoes are whole potatoes that have been sliced all along top side so they fan out when cooking. Learn how to make this delicious alternative to roast potatoes with our step-by-step video.

1. Peel potatoes. Put a potato on board widthways and make thin cuts down, about 5mm (¼in) apart, all along potato.

2. Put potatoes in a bowl of cold salted water and leave to soak for 1hr or overnight. Salt water helps the slices to fan out.

3. Drain potatoes and dry well on kitchen paper. Put potatoes in a roasting tin with a large piece of butter. Season with salt.

4. Cook in oven at 170°C (150°C fan) mark 3. Cook for 1¼ to 1½hr, depending on size of potatoes, until potatoes are golden, crisp and cooked through and slices have fanned out. Brush potatoes with melted butter in pan 3-4 times during cooking.
