Learn how to make pancakes perfectly every time with our step-by-step video.

To make eight pancakes:

1. Weigh 125g plain flour into a bowl and make a well. Whisk in 1 egg, then slowly whisk in 300ml milk until you make a smooth batter the consistency of single cream.
Chill for about 30min.

2. Heat a non-stick pan (or seasoned aluminium, copper or cast iron pan) over high heat.
Grease the base with a little oil or butter, removing any excess, and pour in enough batter to thinly coat the base of the pan – swirling for maximum coverage.

3. Once edges start to crisp and the pancake starts to bubble, check underneath to see if it’s golden – this should be after about 30 seconds. If the underside is starting to brown, flip pancake over using a spatula or fish slice and continue to cook for about 30 seconds on the other side.

4. Give your pancake a flip if you’re feeling brave.
