Ingredients:

Sabudana 1 Cup
Oil 2 tbsp
Peanuts (Moongphali) 2 tbsp
Mustard Seeds (Rai) 1 tsp
Green Chilli 1-2
Curry Leaves 8-10
Turmeric (Haldi) Powder 1/4 tsp
Boiled Potato 1
Lemon 1/2
Chopped Coriander leaves 2 tbsp
Salt to Taste
Fresh Coriander leaves for garnish

METHOD:
Soak 1 cup of sabudana in water for 2 hours then drain the water and put it in the refrigerator for at least 4 hours.
In a Pan add oil and peanuts. roast it for 2-3 mins then add mustard seeds, green chilli, Curry Leaves and chopped coriander, mix it well then add turmeric powder and boiled potato. Stir for a while then add sabudana and salt. Mix well and let it cook on low heat for 6-8 mins. Add lemon juice mix it well and Sabudana Khichdi is ready to serve. Garnish with fresh coriander leaves.
