Frittata [BA Recipes]

A well-made frittata is one of the world's most perfect foods. It's cheap, quick-cooking, and an efficient vehicle for leftovers. For a tasty breakfast or brunch, fry our italian-style omelet recipe, loaded with ham, mozarella and spinach.


Ingredients:
Ham or bacon — 3,5 oz
Mozarella — 4 oz
Spinach leaves — 2 cups
Bell pepper — 3,5 oz
Halved cherry tomatoes — 3,5 oz
Milk — ½ cup
Eggs — 10
Salt, seasoning — to taste

In a large bowl, whisk together eggs and milk. Season with salt & spices
Heat an oven safe skillet to medium heat. Cook sliced ham and bell pepper
Add spinach to the skillet. Stir until just wilted, about 2 minutes
Pour egg mixture over and let sit for 2-4 minutes.
Top with tomatoes and mozarella cheese
Transfer pan to the preheated (350 °F) oven and bake for 10-12 minutes or until the frittata has set (the eggs don't wiggle when you shake the pan)
Garnish with chives and serve!
