Need a bit of a boost at work - or on the go? These super-easy energy bars are quick to blitz together using only three ingredients: cashew nuts, dates and chocolate chips. Leave the chocolate out if you're after a healthier sweet treat that's refined-sugar free.
METHOD 1. Crush cashews in a sandwich bag using a rolling pin 2. Blitz dates in a food processor, then add in the cashews and chocolate chips - and blitz again 3. Spread the mixture in a shallow baking tin lined with greaseproof paper, condensing it as much as possible to prevent it from crumbling later. Chill in the fridge for 20 minutes. 4. Cut and serve :)
