How to Make Rilakkuma Gingerbread Men!

Gingerbread Men Recipe\r
Makes about 12 cookies\r
\r
Ingredients\r
½ cup sugar\r
¼ cup molasses\r
¼ cup water\r
1 ½ tsp ground ginger\r
1 tsp cinnamon\r
½ tsp cloves\r
½ cup (1 stick) butter, softened\r
2 cups flour\r
¾ tsp baking soda\r
Pinch of salt\r

Directions:\r

1. In a medium saucepan, stir together sugar, molasses, water, ginger, cinnamon, and cloves. Bring to a boil and stir until sugar dissolves. Remove from heat and stir in butter. Let cool 15 min.\r

2. In a large bowl, whisk together flour, baking soda and salt. Stir in cooled molasses mixture. Wrap dough in plastic wrap and refrigerate for 2 hours or freeze for 1 hour.\r

3. Preheat oven to 375F. Roll out cookie dough until ¼” thick and cut out gingerbread men. If making Rilakkuma cookies, cut out 2 circles for each cookie. Use cookie size of gingerbread man head to cut off bottom half of each circle, and press ears onto cookies. Transfer to parchment paper lined baking sheet and bake for 8-10 min.\r

4. Decorate with white, red, green, and yellow royal icing.\r

Royal Icing Recipe (note: contains raw egg whites. If you are sensitive to raw eggs, use alternate recipe with meringue powder)\r

Ingredients\r
2 egg whites, beaten until foamy\r
3 cups powdered sugar\r
1 – 2 T tsp water\r
¼ tsp cream of tartar (optional)\r

Directions:\r
Sift powdered sugar and cream of tartar into a large bowl. Mix in beaten eggs, and whip for 5 min until stiff. Add water until desired consistency is reached.\r

Alternate Royal Icing (no raw egg whites)\r
3 T meringue powder\r
4 cups powdered sugar\r
4 -5 T warm water\r
\r
Directions:\r
Beat all ingredients for 7-10 minutes until stiff, and add water until desired consistency is reached\r
