Make Ugly Turkey This Thanksgiving

Nothing says Thanksgiving like a shiny, golden turkey. But according to Skillet, when it comes to preparing your bird this year, looks aren't everything. They describe turkey prep as a "thermodynamic nightmare," because meat on different parts of the bird requires baking it at different temperatures. One tasty, yet possibly ugly way to cook a turkey is "spatchcocked and roasted." How-to details are featured on Skillet's website. It involves removing the backbone of the turkey, cracking the breastbone and flattening it out. Although the process may sound dramatic, Skillet says that once it's cooked, the results are crispy and delicious.
