This is my most requested dessert, I make it every year at the holidays. Its so easy and so delicious everyone will be wanting your recipe. I promise! Double it or triple it for big batches Try this I promise you will love it. You can top this with what ever you love, Cherries, Blueberries, Apple Filling, anything.\r

Mini Cheesecake Recipe:\r

1 1/2 Cup of Graham Cracker Crumbs\r
1/2 Stick of Butter or Margarine (melted)\r
1/4 Cup Sugar\r
3 8oz. Boxes of Cream Cheese (softened)\r
1 Can Sweetened Condensed Milk\r
3 Eggs\r
2 Tsp. Vanilla\r
1 Can of Cherry or Blueberry Pie Filling\r

Mix together the graham cracker crumbs, margarine and sugar in separate bowl. \r
Heat oven to 300 degrees.\r
Line bottom of paper cups with graham cracker mixture in muffin pan, just enough to cover the bottom (about a tablespoons worth, use it all up) mash it down in there.\r
Beat the cream cheese until fluffy, gradually beat in the sweetened condensed milk,\r
add the eggs and beat in, then add the vanilla until the mixture is smooth.\r
Spoon in the mixture into the paper cups (usually about 3 tablespoons full per cup, I use a little Nyquil cup and fill them 3/4 way full).\r
Bake in the oven for 20-25 minutes, just until they start to crack..\r
Let the cheesecakes cool completely then spoon on the topping and refrigerate.\r
Makes 30 mini cheesecakes.\r
