Turnover


Ingredients:



for the buttermilk biscuit dough:



* 8 oz. (1-3/4 cups) unbleached all-purpose flour; more as needed

* 2 tsp. baking powder

* 1 tsp. granulated sugar

* ½ tsp. baking soda

* ½ tsp. table salt

* 3 oz. (6 Tbs.) cold unsalted butter, cut into ½-inch pieces

* ¾ cup cold, well-shaken buttermilk


for the pinwheels:


* ½ cup packed light brown sugar

* 2-1/2 oz. (1/2 cup) raisins

* 2 oz. (1/2 cup) chopped walnuts

* 1 tsp. ground cinnamon

* All-purpose flour, for rolling

* 1 recipe Buttermilk Biscuit Dough

* 2 oz. (4 Tbs.) melted unsalted butter

Steps of Cooking:


1- For the biscuit dough, in a large, wide bowl, combine the flour, baking powder, sugar, baking soda, and salt. Using a pastry blender or your

fingertips, cut in the butter until the mixture resembles coarse meal with some pea-size lumps.

2- Using a silicone spatula, stir in the buttermilk just until the flour mixture is moistened. Do not overmix; the dough should just come together,

and it will be sticky.

3- Transfer the dough to a floured work surface and gently knead 6 to 8 times, dusting lightly with flour if needed to keep it from sticking.

4- For the pinwheels, in a small bowl, combine the sugar, raisins, walnuts, and cinnamon.

5- On a floured surface, pat the dough into a 5-inch square. Using a floured rolling pin, roll the dough into a 12-inch square. Brush the dough with
2 Tbs. of the butter and evenly sprinkle with the sugar mixture. Tightly roll up the dough (like a jelly roll), pinching the seam to seal it
shut. Using a serrated knife, cut the roll crosswise into 12 pieces. Arrange the pieces cut side down on the prepared sheet, spacing them about 1
inch apart.

6- Bake until puffed and golden-brown, 15 to 18 minutes. Transfer to a wire rack and brush with the remaining 2 Tbs. melted butter. Let cool until
warm, about 10 minutes, before serving.

چینی ----- دو سو پچاس گرام
پسی ہوئی دار چینی ----- آدھا چائے کا چمچ
نمک ----- حسب ذائقہ
مکھن ----- ڈیڑھ کھانے کا چمچ


Apple Puff banane ka tarika

سیب کو چھیل کر کاٹ لیں- ایک ساس پین میں چینی٬ سیب اور دار چینی ڈالیں اور ہلکی آنچ پر سیب نرم ہونے تک پکائیں- پف پیسٹری کی چوکور روٹی بیلیں٬ اس کے اوپر سیب کے آمیزے کی تہہ لگائیں- پف پیسٹری کی روٹی کو رول کی طرح لپیٹیں اور پھر اسے ہاتھ سے دبا کر چپٹا کرلیں- اس رول کے چار ٹکڑے کاٹ لیں- اوون کی ٹرے کو مکھن سے چکنا کر کے اس کے اوپر رولز رکھیں٬ اسے پہلے سے گرم اوون میں دو سو ڈگری سینٹی گریڈ پر پندرہ منٹ پکا کر نکال لیں-
