Cutting Peking Duck 片烤鸭

Ingredients:
One 4 to 5 pound duck
1 apple rough chop
1/2 onion rough chop
1 stick of celery rough chop
salt/pepper to taste
dried rosemary
dried parsley
3 pounds Yukon Gold Potato chunks

Dry the duck with paper towels and stuff it with your celery, onion and apple.
I did not oil my duck, but I think you should.
Salt and pepper your duck, then sprinkle with paprika.
Bake your duck @ 400F for 60 minutes
Remove your duck from baking dish and add your potatoes.
Bake 375 for 30 minutes.
Take out of oven and turn your potatoes over, then tent with aluminum foil and bake 375 for 30 more minutes.
Allow to cool 10 minutes then serve.
