Veg Patiala Recipe | Paneer Stuffed Papad Rolls | The Bombay Chef - Varun Inamdar

Ingredients:

For Papad Rolls

50 grams Grated Paneer
1 tbsp Oil
1 cup Grated Vegetables ( Cauliflower, Carrot, Cabbage)
1/3 cup Chopped French Beans
2 tbsp Chopped Coriander Leaves
1 tsp Jeera
1/2 tsp Turmeric Powder
1 tsp Red Chilly Powder
2 tbsp Chopped Mix Dry Fruits
1 tsp Garam Masala
Salt as Required
3 nos Papads
Water for Soaking Papad
Oil to Shallow Fry

For The Gravy

2 tbsp Ghee
1 tsp Jeera
1 tsp Fennel Seeds
1 tbsp Ginger-Garlic Paste
1/2 cup Onion Paste
1 tsp Garam Masala
1/2 tsp Turmeric
1 tsp Red Chilly Powder
1 cup Fresh Tomatoes Puree
Salt to Taste
2 tbsp Fresh Cream
1 tbsp Butter

Garnish

50 gms Grated Paneer
Fresh coriander Leaves

Method:

Veg Papad Rolls

- Heat oil in a pan, add cumin seeds, raisins, and dry fruits. Also add the grated vegetables. Give it a toss.
- Add french beans to the mixture and mix them well.
- Add red chilli powder, turmeric powder, garam masala powder and salt. Mix it well.
- On a low flame, cover the lid and cook it for 3 to 4 minutes.
- Add coriander leaves and give it a mix.
- Cut papad in to half and apply water to make it moist.
- Place the stuffing in the center and seal the papad with the help of water.
- You can also make the traditional cylinder style of papad rolls.
- Heat oil in a pan on moderate flame and place the papad rolls.
- Fry papad on all sides.
- Stuffed papad rolls are ready.

For the Gravy

- Heat ghee in a pan. Add cumin seeds and fennel seeds.
- Add ginger garlic paste, onion paste and cook well.
- Once cooked, add red chilli powder, turmeric powder, garam masala powder and mix well.
- Add tomato puree and mix evenly. Allow them to cook.
- Cover it and cook it for 10 to 15 minutes.
- Once cooked, add water along with salt and allow it to cook for 4 to 5 minutes.
- Place the papad rolls in the gravy and coat them well.
- Add butter and cream to the gravy and mix properly.
- Garnish it with coriander leaves and panner and serve hot!
