Amazing Instant Neapolitan Ice Cream | Madeleine Shaw

Madeleine Shaw is nutritionist to Made In Chelsea’s Millie Macintosh and is also ICON UK’s guest chef.
Today Madeleine shows us her super quick dairy-free Neapolitan ice cream recipe. This is the perfect treat for a BBQ or any hot Summer day. It takes just 5 minutes to make and you don’t need an ice cream maker!
Try Madeleine’s three classic flavours - strawberry, chocolate and vanilla – or even experiment with your own.
What’s your favourite ice-cream flavour?
MADELEINE’S RECIPE
1 x 400ml can coconut milk
3 bananas, peeled and frozen
1 tbsp raw cacao powder
5 strawberries, frozen
1 vanilla pod
METHOD
1. To make the vanilla ice cream: Mix one of the frozen bananas with one-third of the coconut milk and the vanilla in the food processor until you have an ice-cream consistency, and pop it into a bowl.
2. To make the strawberry ice cream: Mix one of the frozen bananas with one-third of the coconut milk and the frozen strawberries in the food processor until you have an ice-cream consistency, and pop it into a bowl.
3. To make the chocolate ice cream: Mix one of the frozen bananas with one-third of the coconut milk and the cacao powder in the food processor until you have an ice-cream consistency, and pop it into a bowl.
4. Serve all three ice creams together.
