1. Make the base layer by pulsing all the ingredients in a food processor. Transfer this mixture into a cake tin and press it down evenly with your hands to form a crust base. 2. Blend all the ingredients for the cream layer in a food processor, until it reaches a smooth consistency. Pour the cream mix over the crust and refrigerate for 3 hours to set. 3. To make the strawberry layer, place half the strawberries in the blender with the dates and vanilla extract and blend until smooth. 4. Cut the remaining strawberries into quarters and fold them into the strawberry sauce, then pour this mixture over the set cake - add more strawberries to garnish if you wish.
