Craving muffins, but no time to bake? Try this microwaveable breakfast idea. These blueberry muffins are packed with fresh fruit and can be made in a single mug.

From French Press Single-Serve Blueberry Muffin IngredientsFor the muffin:

1/4 cup flour

1 tablespoon sugar

1/8 teaspoon baking powder

3 tablespoons milk

1 tablespoon coconut oil

1/4 cup blueberries (or any berry)
For the topping:

1 tablespoon coconut oil

1 tablespoon flour

1 tablespoon sugar
Directions
In a microwave safe mug, whisk together flour, sugar, and baking powder. Stir in milk and coconut oil until smooth. Top with blueberries.
In a small bowl mix together coconut oil, flour, and sugar to make a crumble. Sprinkle the crumble on top of the blueberries in the mug and microwave on high for 90 seconds or until the crust is slightly golden brown and the blueberries are soft.
