What makes Malolos ensaymada 'old-fashioned'

In Malolos, Bulacan, they do not just bake ensaymada. They bake it the old-fashioned way. Bessie Poblete Ramos, owner of a bakeshop that makes old-fashioned ensaymadas, said the recipe comes from way back in the 1940s.
