To make my Congee, I put 1/4 cup of white basmati rice and 1/4 cup of quinoa in a rice cooker with thinly julienned ginger, spring onion, shitake mushrooms, and 2 cloves of garlic. On top, I add 6 cups of water, and keep added water if needed to get a soupy consistency. I boil then simmer it for hours until the mixture gets thick and resembles a porridge. You can garnish it with spring onion, fermented vegetables, salted eggs, soy sauce, salt, pepper or whatever suites your fancy! Dress it up like a savoury porridge, and spice it up any way you want!
